Don’t worry, you’ve done it the right way. Sterilize the jars first – and then add the beets/vinegar.

Thank you for this helpful advice. Is it necessary to put the beetroot in the jars before you put them in the oven? I sterilised my jars first and then added the beetroot and vinegar etc after but now I’m worried I shouldn’t keep the batch. Many thanks

The mail reason that a glass jar would explore (or more likely just crack) in the oven is “thermal shock” – so going from cold to hot quickly and vice versa. So if you avoid the “quick temp changes” you should be ok. I’ve never had it happen.

Your advice on cooking and preserving beetroot is very informative. I’m growing beets for the first time this year so I’m going to take some of your advice on board and give it a try.
